I would like my forum to be visible to all who visit but restrict posting to registered members. At the moment people have to register before being able to view the forums. How can I change that please.

Login in the "Admin Section".
Click on the “Main Forum Configuration”.

Next to the bottom, of the items listed, you’ll find “Require Registration”; place the dot in the “OFF” position.
Then,click the “Submit New Config” tab.

This will allow all viewers to see the forum. All members will still have to be logged in to post. Those who are not members can view the forums, but will not be able post on your forum(s).

How do we make it on my forum that non club members don't have to register to view or post, but members only do have to register to view and post without the non members seing this bit.

Turn off "require registration" and non forum members can view topics. You cannot post without being a member (its against our Terms of Service).

You cannot have rules that are more strict for members than anonymous users.

Unless I misunderstand what you need to do. Can you try elaborating ?
