I’ve been using my signature to promote some of our gigs – in retrospect probably not a good idea – as when I update the sig it still shows the old sig on older posts.

Is there anything that can be done about this, couldn’t see anything in admin...?

Turn on dynamic signatures in the admin area.

Not unless you edit them. The signature is contained within the posts when dynamic signatures was not turned on.
